Tomato and bocconcini salad

This fresh tomato and bocconcini salad is a delight as a side to most any meal!

Ingredients

  • 20 Bocconcini balls
  • 20 cherry tomatoes
  • 3 tbsp (45 ml) olive or canola oil
  • 1 tbsp (15 ml) balsamic vinegar
  • 15 fresh basil leaves
  • 1 tbsp fresh chives
  • Salt and pepper to taste

Preparation

  1. Cut your bocconcini balls and tomatoes in half.
  2. Toss in a large bowl and drizzle with the oil and balsamic vinegar.
  3. Chop the basil leaves and chives and sprinkle into the bowl.
  4. Gently stir everything together until the cheese and tomatoes are coated with the oil, vinegar and herbs.
  5. Season with salt and pepper.
  6. Serve and enjoy!
