This fresh tomato and bocconcini salad is a delight as a side to most any meal!

Ingredients
- 20 Bocconcini balls
- 20 cherry tomatoes
- 3 tbsp (45 ml) olive or canola oil
- 1 tbsp (15 ml) balsamic vinegar
- 15 fresh basil leaves
- 1 tbsp fresh chives
- Salt and pepper to taste
Preparation
- Cut your bocconcini balls and tomatoes in half.
- Toss in a large bowl and drizzle with the oil and balsamic vinegar.
- Chop the basil leaves and chives and sprinkle into the bowl.
- Gently stir everything together until the cheese and tomatoes are coated with the oil, vinegar and herbs.
- Season with salt and pepper.
- Serve and enjoy!
