Peach and tomato salsa

This sweet and zesty salsa is fresh, colourful, and quick to prepare – perfect with tortilla chips or as a topping for grilled meats and seafood.

Ingredients
- 2 cups (500 mL) grape, cherry, or plum tomatoes, diced
- 2 small bell peppers (red, yellow, and/or orange), diced
- ½ medium red onion, diced
- 28 fl oz (796 mL) canned peaches (drained) or 3 to 4 fresh peaches, diced
- ¼ cup (60 mL) finely chopped fresh cilantro (or parsley)
- 2 tbsp (30 mL) lime juice (about 2 limes)
- ½ tsp (2.5 mL) salt
- ¼ tsp (1 mL) black pepper
- 1 small jalapeño, finely chopped (optional, for heat)
Preparation
- In a large bowl, combine the diced tomatoes, bell peppers, and red onion.
Tip: A vegetable chopper makes quick work of chopping the tomatoes, peppers, onion, and even the peaches. - Dice the peaches (no need to peel if using fresh) and add them to the bowl. Stir gently to combine.
- Add the cilantro, lime juice, salt, and pepper. Mix everything until well combined.
- Taste and adjust seasoning if needed. Serve with tortilla chips or as a side to grilled dishes.
Tip:
This salsa tastes even better after chilling in the fridge for 30 minutes to let the flavours blend together.
