Cheesy potato bake

This savoury recipe is the perfect way to kickstart your weekend brunch!

Ingredients

  • 2 cups (500 mL) baby potatoes, any variety
  • 1 tbsp (15 mL) olive oil
  • ¼ tsp (1 mL) salt
  • ¼ tsp (1 mL) pepper
  • 4 eggs
  • 2/3 cup (160 mL) cottage cheese
  • 1 cup (250 mL) cheddar cheese, shredded
  • Half of a small yellow onion, finely chopped
  • ½ tsp (2.5 mL) garlic powder
  • ½ tsp (2.5 mL) onion powder
  • 1 tbsp (15 mL) fresh or freeze-dried chives, diced

Preparation

  1. Preheat oven to 350°F (180°C). Spray a 9×9 inch baking dish or line with parchment paper. Set aside.
  2. Dice the baby potatoes and place them in a microwave-safe baking dish and cover. Microwave on high for five minutes.
  3. Once the potatoes are cooked, add the olive oil, salt, and pepper. Toss to coat, place the lid back on the dish, then set aside.
  4. In a large bowl, whisk the eggs, cottage cheese, cheddar cheese, and the chopped onion until well combined.
  5. Add the garlic powder, onion powder, and chives. Mix well.
  6. Gently stir in the diced potatoes.
  7. Pour the mixture into the prepared baking dish.
  8. Bake for 23 to 25 minutes, or until the sides are slightly golden brown and the top is firm to the touch. Let cool for five minutes before cutting. Serve and enjoy!
